My main reason for making the trip to the northwest was to see my Dad. He turned 86 on the 18th of June. It was nice seeing him, however our fair wells managed to get clouded over with those who don't come! Yikes!

Our day began in the Sioux Falls,SD airport and ended in Orting WA! Upon boarding I was asked about the barf bag but all went well and the bag remained unused.

On Vacation

Picked up one grandson, Tiegen, today at noon. After 5 hours of driving we ended up in Mitchell, SD.
Tiegen used Siri to locate a Chinese Buffet for dinner.....I was amaze to find he knew exactly what he wanted to eat. Believe it or not my fortune cookie read, "Now is a good time for you to explore. Take a vacation!"




Then we made a Corn Palace stop. The Corn Murals were as beautiful as ever, I'm not sure if the artists were nearing completion in preparation for the summer tourist season or if they are always a work in progress, but the unfinished ones look like they will be awesome as well!



After a dip in the pool we are off to bed.....tomorrow will be a big day!

It's getting close.....

I am getting excited and I think my 3 little traveling companions are as well!
My 3 grandsons and I, fly out on Tuesday and with luck we'll be watching the sun set in the greater northwest. Washington get ready we are going to take you like a storm!

Grilled Northeast Salmon with Mustard Dill Sauce





Mustard Dill Sauce

1/2 Cup Sour Cream (I used low-fat but the chose is yours)
1/2 Cup Mayonnaise ( I used reduced fat here as well)
3 Tablespoons finely chopped onion
2 Tablespoons Dijon Mustard
2 Tablespoons minced fresh dill weed
2 teaspoons fresh squeezed lemon juice
Salt & pepper to taste

In a small bowl mix all the ingredients together, cover and refrigerate for 3 hours.

Grilled Salmon

Per-heat the grill.

Mix;
1 Tablespoon Old Bay Seasoning
1/2 Teaspoon Dill Weed
1/4 Teaspoon Onion Powder

Brush the Salmon fillet with olive oil & sprinkle seasoning mixture over the fillet.

Spray a piece of foil, double the width of the fillet, with a non-stick spray and lay the salmon on one side of the foil skin side down. Grill for 3 minutes, spray the remaining foil with nonstick spray and flip the fillet over. Grill for 2 minutes. Flip the fillet back skin side down and remove it from the grill.

Plate your salmon and serve it with the mustard dill sauce.

Serves 4

Cold Brewed


I happened to catch Doctor Oz one day when the discussion centered around "foods that are good for you".
When the conversation turned to coffee I learned that when hot water is poured over coffee grounds the health benefits of that cup of coffee diminishes greatly. Also the acid are removed from the coffee and added to that cup....explaining the irritable stomach following coffee consumption.
I hit the Internet in search of a way to make a "healthy" cup of coffee and I can up with the following recipe. I found an inexpensive french press at Walmart, $18, made by Mr. Coffee.
Cold Brewed Coffee Using a French Press
•French press (my Mr. Coffee one holds about 3 cups)
•1 cup coffee (Coarse ground recommended for cold brewed coffee)
•2 cups water
Directions:
Pour the coffee in the press and then add the water. Depending on how strong your coffee is you may want a little more or less water.
Stir the coffee with a chopstick. You want to make sure all of the coffee grounds are wet. Wait, about two minutes and stir again. Some of the grounds should now settle to the bottom instead of all floating at the top.
Wait 12 hours. I have also other recommendations that after 15 hours or so, you start to extract some of the bitter flavors from the coffee.
Press down slowly on the plunger. Pour out the concentrate into an airtight container.
To make coffee either add cold water, milk or hot water. The ratio used depends on how strong you want your cup to be. I usually do about 1/4 or 1/6 concentrate. Experiment and see what tastes best.

While researching Cold Brewed Coffee I found many concerns regarding the disposal of grounds. I just dump mine into a newspaper fold it up and toss it into the trash.
